Could you please introduce yourself?
I am a faculty member at the Food Processing Department of the Çanakkale Onsekiz Mart University. My main field of study is the food science and engineering, and I focus in particular deeply in eggs and egg products, and I can briefly summarize my study/research issues under 5 headings, these are;
1. Evaluation of bioactive compounds from food wastes (by-products such as lysozyme, natural eggshell membrane) , process development and optimization.
2. To implement sustainable, antimicrobial, biodegradable and active packaging systems such as non-composite ones based on bio -plastic edible coatings.
3. Optimization of sustainable technologies to protect/increase the quality and safety of eggs and fresh foods, including the reuse of by-products, to increase the storage stability and shelf life of perishable food products.
4. Ultrasound, ozone, electrolyzed water, chlorine dioxide, membrane in foods and mainly eggs and products. Applying new non-thermal innovative food preservation techniques such as membrane filtration.
5. Development of innovative e-solutions and application practices for the HoReCa (Hotel, Restaurant, Cafe) sector.
Can you tell us about the R&D studies you have carried out?
In addition to the research projects that I conducted on increasing the functionality of eggs and egg products and their applications in model foods, there are also sectoral projects in which I work as a consultant and executive within the scope of university-industry cooperation studies. I have been involved in investigations through diverse long-term R&D projects financed by public Institutions (EU, National, and local) as well as in more specific projects financed by private companies. I have 6 patents obtained from projects and sectoral experience.
Can you tell us about the commercialization process of your patent?
I have carried out several projects&patents with the aim of transforming academic/industrial knowledge into value-added strategic products. I consider the execution of joint studies with the stakeholders in the ecosystem by observing the important process in the commercialization of the patent and in solving a problem of the sector. The relevant information defines and represent method for 'The Machine for the Separation of Eggshell and Membrane' (patent nr: 2018/17746), which enables the production of value-added and sustainable products from egg industry waste. The commercialization protocol of the patent was signed with Şükrüye ÖZBİLEN (Egglin Food Company’s General Manager) in the presence of a notary public. On this occasion, I would like to thank 'Egglin Food Co.' Company’s General Manager Mrs. Sükrüye ÖZBİLEN and I wish our cooperation to continue for many years and I present my respects.
